Our journey begins with patience and precision, as our brood stock mature over four years before their eggs are deemed ready for commercial harvest. Nestled across several pristine sites in New Zealand, our aquaculture practices ensure both food security and the flexibility to meet increased demand swiftly and sustainably.

Embracing the ethos of organic cultivation, our Giant Kokopu brood stock thrive without the use of pesticides or chemicals, living harmoniously for over two decades. The Giant Kokopu, One of New Zealand's most endangered Whitebait species, now sustainably grown for egg production, also provides opportunities for re-release of Whitebait back into the wild. Our breeding stock will be with us for over 20 years, where they not only provide a sustainable income from egg [caviar] production but also assist conservation efforts to increase the numbers of breeding stock in the wild. We never forget that these beautiful creatures are part of our family.
